
February in Kushiro, and I grabbed this absolute gem of a scallop sashimi in Sakaechō — still sweet and buttery, barely kissed by the knife. The shell was still warm. This is what peak hokkaido seafood tastes like, and honestly, I couldn't stop going back for more!
