May in Ibusuki — I soaked in the volcanic hot springs and then this gorgeous kaiseki broth arrived at my table. Tender pork, silky egg custard, fresh vegetables all floating in this rich, soul-warming stock. The geothermal energy of Yunohama really does something special to the food here!
